Can I get away with using these for a wedding buffet-style dinner? I'm concerned about people walking with full plates and plates breaking/bending.

Depends on the wedding but I think the would be great for a wedding buffet style dinner. They are very sturdy. I used them for a large family Thanksgiving dinner that was served buffet style. And they are compostable so no guilt!

Sturdy enough to build a gingerbread house on them?

These are very sturdy so I think they would hold a gingerbread house.

Looking for folks who have composted these. How long did it take?

have not composted the plates myself.

says ships in 1-2 months! Is this true it could be a month rather than 2 days with Amazon Prime?

Mine actually shipped in about 5 days
